Squash Cake aka Kim-kwe Keh

Description:
This week, my mother-in-law taught us how to make her special Kim-kwe Keh. I consider this a passing on of her legacy as a really good cook and homemaker, and I am grateful. I consider this recipe as a special gift that I will treasure. I'm glad both my kids like this a lot; it's a healthy Asian snack that I hope their kids will enjoy too when the time comes.

Ingredients:
1.5 kilos squash
3-5 cups of water, as needed
375 g rice flour
1.5 cups broth from hibe and dried mushrooms

Filling/ Topping:
150 g ground pork
1/8 cup hibe, rinsed very well and soaked, then minced
4 pcs dried shiitake, soaked and minced
4 pcs shallots, sliced

Salt and pepper to taste

Directions:
Remove skin and seeds from squash and grate. Put grated squash in a sauce pot and add 3 cups water. Cook squash until soft and moist, adding more water as needed. (Approximate weight of cooked squash is 1.8 kilos.) Scrape the bottom of pot to prevent scorching.

Prepare filling. Saute shallots in oil until fragrant and light brown. Add in drained hibe, and continue to sauté. (You may set aside a portion of this mixture to serve as toppings.) Add the ground pork and shiitake mushrooms, and continue sautéing until brown and fragrant. Add in oil as needed to prevent drying and season with salt and pepper. Set aside.

Combine rice flour and broth, then add to the squash. Add filling mixture, season with salt and pepper, and mix thoroughly. Pour in lined loaf pans/ round molds, then flatten top. Steam for 1 hour or until done. Let cool completely before serving.

Note: Squash cake has a shelf-life of about three days in the chiller.

Serving Squash Cake:

Slice squash cake into about ½ inch slices. Pan-fry until golden brown on both sides, then serve with hoisin sauce or sweet chilli sauce.

Girlie's Bridal Shower Cake

This wa my first time to make a decorated cake for a bridal shower, and this was the sexiest design I can come up with (looks more like a cake for Valentine's). Trixie kept on asking why there was a baby on top of the cake! I really had fun making this one, although it took me the entire day to bake, assemble and decorate (plus the extra day to make the filling ahead). But more than anything else, it was a darn good chocolate cake. Trixie just loved licking the ganache off the spatula!

It's Chocolate Cake once more.

I'm obviously obsessed with baking chocolate cakes this week (three times in a row to be exact) and I blame it on the rainy weather hehe. This time, I made it into a two-layer cake and I frosted it with Cote d'Or Belgian Dark Chocolate which I got as a "pasalubong" from Gatch (I'm blessed with generous friends, really). This version, I must say, is the best among the three. It really pays to use top quality ingredients; it's so worth it. This is my official chocolate cake from now on. Side comment: I decided to put Trixie's photo in the end because she helped me bake the cake and she happily waited for Brandon to finish taking the photos so we could sing a birthday song and blow an imaginary candle. :)

Ghirardelli Chocolate Cake

Thanks to my kumare Maybelle who gave me a big can of Ghirardelli cocoa (best gift ever!), I am happy to present this chocolate cake for everybody's visual enjoyment. This is just a simple but moist chocolate cake that I topped with satiny, bittersweet chocolate glaze, dark chocolate chips and chopped pistachio nuts-- really satisfying! Photos by Brandon who was rewarded with a slice after the shoot :)

Newest Chocolate Baby

Meet my newest cake- ChocoIate Cake with Fudge Icing and White Chocolate Curls (hmm... my cake name is so obvious naman... better think of a better name- I'm open to suggestions!). Anyway, I'm posting this photo for Stew's sake :) Hope your mom would love this cake.

My angel, my cake!

I've been keeping a container full of unused egg whites in our fridge for weeks already (excess whites from making pastry cream and sponge cakes) and it's been bugging me. I am not one who will just throw away food, so I was really careful in storing them so they will not get rotten. I checked them almost everyday, smelling and looking at them closely, making sure that they will still be of good use one day. And now, they're gone (yehey!) and have been transformed to Cocoa Angel Food Cake which I'll be serving tonight at grandma's house. Angel cakes are sponge cakes that are fat-free (no butter or yolk) and very light and delicate. There are also no chemical leavening in the cake so they get their "height" from beaten egg whites. Enough on baking chemistry, and meet my dark angel- who saved the egg whites from getting thrown away! FYI, I got the recipe from "Joy of Cooking"- my favorite cookbook.

The Birth of a "Pie"

This week, I attempted to make Crema de Fruta, so Sunday night, I baked the sponge on a half sheet.  But the sponge base was quite low for a Crema de Fruta.  So, I ended up making Boston Cream Pie on Monday (which I will make again next time!)  I then decided to make another Sponge cake, but now, I baked it in a 10-inch round pan.  I wanted to try something different (instead of the original plan of making Crema de Fruta).  So I cut the round Sponge in half then I put Pastry Cream and strawberries in the middle, and I couldn't think of a name for it, So Brandon just called it "Strawberry Cake."  This afternoon, Brandon's aunt ordered for the "Strawberry Cake" but then I thought of a better presentation for it and so today, "Strawberry Cream Pie" was born!   I put the pastry cream on top of the round Sponge and decorated it with sliced strawberries, then I brushed sweet gel on top for that glossy shine.  Come to think of it, it is somewhat a version of Crema de Fruta, only without the the gelatin on top.  So meet my Strawberry Cream Pie, which is really a cake!  Instead of a pie crust, it's a cake base but it's just like a pie where you put some cream filling then top it with fruit.  :)
