Vegan Chocolate Ganache

Description:
This ganache recipe (from Vegan Cupcakes Take Over the World) goes perfectly well with vegan chocolate cupcakes (obviously) but this chocolate frosting is good whether or not you have dietary preferences. A note though, this vegan ganache is a bit runny and it doesn't set like the regular ganache (the one made with cream) so better let it sit at room temperature until a little thick and of more spreadable consistency. If you can't wait, then use it as a sauce instead!

Ingredients:
1/4 cup soy milk
4 ounces semisweet chocolate, chopped
2 tablespoons pure maple syrup

Directions:
Place chopped chocolate and maple syrup in a heat-proof bowl.
Heat soy milk to a gentle boil then pour over the chocolate.
Combine using a spatula until chocolate is melted.

Vegan Chocolate Cupcakes

These are really good cupcakes--- so moist and chocolaty. You wouldn't even think that these don't have any dairy in it. Love, love, love these cupcakes.

It's Red Velvet Once More

I think I'm in love with Red Velvet. I made a batch yesterday with a better recipe (from dianasdesserts.com), and Brandon and I are officially hooked. I still used the same milk frosting and these cupcakes taste even better the day after. (Stew, you were right!) I think I'll bake another batch tomorrow...

Red Velvet Glory

Inspired by Clovy (my certified cupcake lover in NY), I made red velvet cupcakes today. I haven't really tasted a red velvet cake before nor have I seen one, but after much research on various sites and books, I no longer hesitated and decided on the Red Velvet 1 recipe found in allrecipes.com. So here are my red, sexy cupcakes with creamy milk frosting (I actually tried the cream cheese frosting, but this cooked flour and milk frosting tastes so much better). As always, the photos were taken by Brandon :) If you want more info on Red Velvet Cakes, check out the "So Naughty, So Nice" article in http://www.nytimes.com, under Dining and Wine section.
