Weekend at Clark- Part 2

The following day, we woke up at 5:30am just to make it to the hot air balloon opening. But alas! The release of the hot air balloons was canceled due to strong winds :( Next year nalang ulit.

Weekend at Clark- Part 1

Over the weekend, we checked in at Holiday Inn Clark, in time for the Hot Air Balloon Fiesta. Trixie really enjoyed this trip- lots of fresh air, new things to see, and cows to meet!

Trixie, a True Tsinay!

Trixie tasted her first balot two nights ago and she loved it.  Mind you, she liked the "sisiw" and the balot soup over the yellow part (the only part I eat in a balot, so she takes after her dad!  See what's left of the balot in the photo.).  So every night, whenever she hears the balot man, she goes to Brandon and asks for a balot purchase, then they eat it together.  I call those moments "Balot Bonding with Brandon" haha!  This is just one of those things that show the Pinay in Trixie.  Here are some more:
-  She loves kakanin.  Her favorite is kutchinta and pichi-pichi.
-  She loves mangoes and pomelo.
-  She loves pandan salad.
-  She says "Opo Ma'am!"

Well, she's also a true Chinese in many ways. 
-  She loves Chinese lumpia.  (We call it food pockets, like Elmo does.)
-  She loves tao-hwe, siopao, noodles and tikoy.
-  She wants to be called "Siao Mei-mei" and not baby or little girl.

I married the Grill King!

My ahia gave us this McGrill Griller so we can grill on top of the stove. This is a cool Filipino invention!

Brandon and I had a most wonderful night :) Both of us were busy in the kitchen... actually, Trixie too!. Brandon was in charge of the pork chops while I baked some corn muffins and vegies as side dishes. The result--- a really delish dinner! Brandon's pork chops were so flavorful, juicy and tender that Trixie effortlessly ate almost the whole pork chop! Best pork chops I've eaten, actually. (Way, way better that Italianni's!) I was also happy with the corn muffins--- finally, I was able to make corn muffins that I am really proud of! This is because I've had terrible, terrible corn muffins before. We are both indebted to "The New Best Recipe" cookbook which I now declare the best cookbook in the world!!! And I also declare my hubby Brandon as the Grill King!!!
